Wild Blueberry Sausages

Wild Blueberry Sausages Picture

Ingredients

¼ cup (60 ml) fresh or frozen wild blueberries
¼ cup (60 ml) water
2 lb (1 k) medium ground pork (20-30% fat)
2 tsp (10 ml) kosher salt
2 tbsp (30 ml) finely chopped fresh rosemary (leaves only, stems discarded)
½ tsp (2 ml) chili flakes

Preparation

  1. Add wild blueberries and water to a blender or food processer and purée.
  2. Add pork to large bowl, add the salt, rosemary, chili flakes and wild blueberry puree.  Mix very well with clean hands until fully combined.
  3. Form into patties about the size of a slim hockey puck, or stuff into casings. Once formed, transfer to refrigerator and allow to chill for at least 2 hours.
  4. To serve, fry sausages in a skillet over medium heat until golden brown all over and cooked through; about 5 – 7 minutes per side.
